Be 4 days this evening. Probably go 5 or so to get them all done. This one was the center pulled early to check.

yes sir. I think my dad wants to stop smoking and let them hang dry for a day, we'll see. I've been working elsewhere since my last pic update but hope to be out there soon to check out the progress. Heck, yesterday I drove 34 miles one way just to check the smoke, cut wood and add to the smoker!

Looks good and already has lot more smoke than any in grocery stores around here. When I had a smoke house would keep the smoke rolling for 3 days and nights on it and also would poke holes in it with a pen right after hanging to facilitate drying.
Miss those sausage.
