Specklebelly recipe?

Specklebelly recipe? - 12/11/14 10:33 PM

Anyone have a good speckle belly recipe they'd share? I've got a couple breasts I thawed out and can't decide what to do with them. Was thinking of cooking in the oven with some bacon, bell pepper, jalapeņo and onion. That's my go to with crane. Like a popper minus the grill ( it's raining here)

glad i saw this! just take them and slice them into steaks like you would do backstrap and soak them or not in milk for a few then season them then dip in flour and fry like you would backstrap!!!!! you cannot go wrong i tell peeps all the time how much better it is than deer meat lol weve been doing this for years! Good luck and if you try it let me know what you think!

Aw. A little too late. But I have more. I'll have to fry it up next time. I have plenty more.
I tossed it in the oven with peppers, onion, bacon, and a sauce mixture of the bacon dripping and bbq sauce. 400 degrees for 20 mins. Nice and medium. It was excellent.

Specs and cranes are the only birds I pluck any more and the only reason is they are so good smoked.

Try this for the really strong flavored geese. Cut in fingers and soak in butter milk for couple hours. Dip fingers in homemade ranch dressing and dredge in flour. Cook in hot grease til done....
