Venison Bulgogi - Korean BBQ

Guys, this is hands down the best venison dish I've ever cooked. Thinly slice the backstrap, place in marinade overnight, cook up in the wok, and serve over rice.

Thanks!!! I found some backstrap in the freezer from last year and was going to commit blasphemy with it. I think I'll do this instead.

I get Kimchi at H Mart in Carrollton. You have to know where it is in the store if you don't speak Korean.

I have definitely spent at least 30 minutes wandering around Asian grocery stores. I also like to get my Thai curries there as well. Post incoming on that one.

Kimchi is fairly easy to make. You might need to go to a Korean/asian market for a couple of the ingredients (rice flour, shrimp paste, fish sauce, Korean red chili pepper flakes). I have used this recipe several times before and it is my favorite.
Maangchi-Napa cabbage kimchi
Maangchi has several different kimchi recipes if you like different styles. This particular one reminds me of the great kimchi I would get in Pusan. I substitute shrimp paste if I don't have squid available.

I'm looking forward to trying this venison bulgogi. It looks like it would be pretty good.

If anyone is still sitting on the fence about trying this, jump off and do it. I followed the instructions on the link, marinated in a vacuum sealed bag and cooked it. My wife and I thought it was the best backstrap we've had so far (well, on par with bacon wrapped & grilled).

We plan to vacuum seal some more in a marinade prior to our next trip to the lease and cook it out there. All you need is rice and a wok or cast iron fry pan.

I lived in Korea for 2 1/2 years and love their food. I do the same with some of my venison with the following modifications. Instead of honey, use brown sugar (about 1.5 tablespoons) and add beef bullion (or buy the Da-Shi-Da at a Korean store) and crushed red pepper (again the Korean kind, it is not hot, just very tasty). I like to add onions, carrots, mushrooms and Korean cucumber too.

If you age your duck for 10 days before cleaning it in the fridge, this recipe rocks!
