I just scalded and skinned my last tomato. I make it up in 8 pint batches. I use 18 to 24 tomatoes, 4 large onions, 2 to 4 jalapenos per pint, chopped in the processor. I add salt, vinegar, and sugar, cook until the onions are clear, then add two 12 ounce cans of tomato paste. I spoon it into pint jars and put it in a hot bath for 20 to 30 minutes.

I have but quit putting cilantro in my canned salsa. Cilantro loses it's taste after it has been canned. You won't find any store bought salsa with cilantro. I have pleanty in my garden, and I'll adde it at times after I open the jar.

I planted tomatillos this year. They are prolific, to say the least. I'm about to char a big batch on the grill and make them into the Mexican green salsa. We'll see how it turns out, I'm hoping it will be like a chipotle version of the green salsa.
