I知 really tired of dull knives... - 04/03/11 09:52 PM

You guys I really need help, I知 tired of dull knives, I have had dull knives all my life. I got this Henkel knife sharpener, had it for years, do I need another? Or something else??

http://www.amazon.com/Zwilling-Henckels-...6697&sr=8-4

I got a bunch of Henkel knives I use for cooking, takes forever to get them sharp, and I never really get them that sharp.

Here is my knife I use for cleaning duck (only game a really hunt and clean), same thing, takes forever to get sharp, and I never really get it that sharp.

Love this type knife for cleaning duck, just want a sharp one!! What do I do!?! Tried a wetstone, I know, I'm not doing it right..bs

Any ideas? I want an electric sharpener.

Wet stone will get it there ask a chef to show you how.

If your knives are in really bad shape you might
be better off having the edges corrected by someone
that knows what they're doing (as in paying a smith).

Once a knife has a proper edge and is sharp, you shouldn't
need to do anything with it except hone it with a steel
or ceremic rod to bring it back to sharp. Assuming of course
the edge isn't getting abused.

Our local meat market has a knife sharpening service.
Drop them off (think it's Wednesdays) and pick them
up a few days later. I've not done it but seems like
a butcher would know how or where to get a knife sharp.

PKnTX is correct the mfg's edge maintenance is important. If you are not maintaining that (henkels is 20 degrees) it will be difficult getting it sharp. That said you can put any edge on the blade you feel comfortable with but you will have to use progresively finer grinding belts. As far as the duck knife most mfg's of serrated edges claim that you don't need to sharpen them... but the rest of the blade will.
Once I get the edge I use a smiths pocket pal to keep it. That Work Sharp tool looks interesting and that's the principle behind obtaining an edge.

I'd recommend picking up a Spyderco Sharpmaker and also buying the diamond rods to go with it. The diamond rods will allow you to quickly set the edge on a dull blade and then you can finish with the finer stones.

I have some more expensive systems but the sharpmaker is hard to beat for ease of use and price.

I've never had much luck with a fixed angle grinder. They will put an edge on but they don't finish it out properly. If you do mostly duck hunting you're concerned with the sharpness of the blade not necessarily with it's ability to cut thru bone etc. A 12 to 15 degree edge would work fine.

Those work great for thin kitchen or fillet blades. Outdoor type blades tend to be thicker which renders the electrics useless. Check this link out, If you have a grinder, you can strip off all the safety bs on the ends and bolt these babies right on. I guarantee you will use NOTHING easier, faster or better.

When you hone the knife it aligns the teeth helping them slice evenly through something a right handed knife and a left handed knife user the teeth will acually angle to one side or the other slightly. If you do not have a steel to sharpen the back of another knife will work somewhat as well as using the back side of a ceramic plate works well(diy tip). If a knife is damaged it needs to be reworked with a stone I prefere a wet stone to a oil stone. Thanks for posting the tip I wish we had a diy section as a sticky.

buy one of those little white and blue sharpeners that you pull down the blade. You can get them at wally world or Academy. They are less than $10. They are made in Marble Falls. The hand gaurd is blue and the rest of the sharpener is white. Has somelittle rods inside that shape your blade to the correct angle.

It will feel rough the first few strokes until your blade is shaped, then it is a very smooth pull. Once it is sharp, and you use it for awhile, it just takes one or two pulls to get it back sharp again.

I also run my knives against a leather belt, dragging blade backwards to smooth the edge up a little more.

It super simple and takes seconds to sharpen your knife well enough to shave your arm. And you can just throw it in your pack.

I got this link from a friend. I haven't tried it, but it appears that a car window will work in a pinch:

I have been using these for many years, don't own or use anything else. I sold over 20 knifem sharpining items at a garage sale years ago.I sharpen all the knives at deer camp, quickly , I might add. These wheels are what the guys at Gander Mountain and Bass Pro shop use, I just ask them where I could get one.

Maybe try a DiamondBlade knife. These knives are pretty pricy they will stay sharp longer than any other knife. When it does get dull, you can send it back to the factory and they will sharpen it for free.

We have a family ranch in West Texas where we constantly thin deer so I field dress 25 - 30 deer per year. I tried LOTS of different knives and by far the best I have found is the Cabela's Alaskan Guide Series 110 Buck folder. It is made with S30V steel which stays sharp 2-3 times longer than the 420 which is in most knives. I also switched to a Lansky Sharpener which is fast and puts a precision edge on the knife.

I have a Wart Hog sharpner and love it. Once it is set up correctly even the wife can put a razor edge on a knife in a heart beat. One negative about $100 but will last a lifetime.
