When I was a kid we were told pluck everything. Doves were fried whole to be served with rice, gravy and biscuits. Later I just got to where we breasted everything out and threw away the rest. I am going to build that coon arse plucker for ducks and geese in an attempt to utilize everything and waste as little as possible.

We had long days on our Kansas hunt and opted to keep the birds cold and clean them at home. The state park we stayed at probably would not appreciate the feathers and what not. When we left the cabin in the morning, we did not return until 9 or 10ish every night. So I cleaned my buirds yesterday morning. This time I opten to keep the thighs and legs, the breast, liver, gizzard and hearts. I nearly doubled the amount of meat I would have had if only breaasting them out.

I sliced the liver thin and dehydrated it in the oven. It makes a fantaastic dog treat. All the dogs were standing at attention after the first piece. They love it! The hearts and gizzards I packaged for when my wife goes out of town. She is not that big a fan of gizzards. That will be for a man day.

Now here is a recipe for you. I took the thighes and legs and put them into a crockpot with onion and garlic and a little bit of water, salt pepper. It took about 8 hours in the crockpot to get them done enough to flake the meat off of the bone. It hen removed all the meat and what remained of the onions. I threw out the remaining stock as it was really fatty and probably too gamey tasting for my woman folk at the house. I mixed in cream of mushroom soup and stirred it up. I let that get hot in the crockpot. I poured that over rice. I have two very picky eaters from southern california that never ate wild game before they met this redneck. They were all up in that bowl of goose thighes. It was fantaastic.

I started plucking everything toward the end of this season. I plan on plucking every duck I shoot next year except ringers and buffleheads.

I'm going to make a plucker that you can attach a shop vac to and catch most of the feathers.

Hank has a great website for cooking game, great suggestion. I cooked most of my birds whole this year in a braise...everything from canvasback to spoonies were aged 10-14 days. All of them were great tasting, never left overs.

Pressure cooker will have duck leg meat falling off the bone in no time, can't remeber exact time, but want to say less than an hour.

I thought about using one of my pressure cookers but for some reason opted to not use it. I will have to give that a run next time.

My grandma has a story about a duck and a pressure cooker. Somehow duck ended up on the ceiling.

Maybe lid was not on good? I tried to take the lid off when all the pressure was not release (many years ago), food all over the kitchen. Them duck legs knot up, tough as hell, even rare they are tough. Pressure cooker is the ticket, key is to not burn it by letting all the liquid steam out.

I like to caramelize them first in a skillet, then put in the pressure cooker. 30 minutes will probably do it.

My wife wrote a description on facebook saying it was off the chain. If she.liked it and says that, she aint bullshooting. She doesnt say things like that. She aint a coddler.

Thighs are my favorite piece of a goose. My Mother used to ask why I hunted geese since according to her they were not good to eat. Plucked a couple specs and smoked them along with turkey and ham for Thanksgiving one year. I do not think she even tried the turkey or ham after tasting the goose.
