If you are interested in doing more with your doves than just poppers (which are awesome though) then you might check out this site. http://honest-food.net/wild-game/dove-pigeon-recipes/There's a lot more wild game recipes than just dove too on that site too.

Didn't see it listed, but dove make a great gumbo. Dust with flour and brown with bacon, remove and use the drippings for your roux. After that, treat them like shrimp, make the gumbo and add the dove back just for about the last five minutes of cooking time.

I was going to make dove fajitas, but I think I'll try that.
