I turned into a 3 1\2 cull buck and we got one package of backstrap back from the processor. The package weighs one pound exactly. I would have thought their would be at least 2 lbs of meat in the back strap??

Considering its the filet mignon of the deer we were pretty disappointed to say the least!

I shot a 1.5 year old doe last week. I got atleqst 4 lbs total of backstrap. And it was the first time I processed one myself. And left a little meat on the carcass.

Hmmm, I just double checked the meat and all the other packages are labeled round steak. The one package is labeled deer tenders and is shaped like it was one side of the back strap cut in half. I will have to lodge my complaint and then decide where else to take my next deer and the steer I am going to have butchered next fall!

Sounds like you got the tenderloins and no backstrap at all. Was it Hiblers?

Processing a deer yourself is a big pain in the rear. But you know what you are getting. But hell the two easiest thing to process are the back strap and the tenderloin. Pull those yourself and let the processor deal with cutting up the hams and shoulders.

I would think the back straps alone would weigh close to 5 lbs each, never weighed them honestly, but hell, they are near 20- 24" long if you carve it out tip to stern.

How much meat did you get total? they may have inadvertently mis-labeled, or ground by mistake (trying to be positive, even though you likely got screwed)

I disagree. Buy a vacuum sealer at wal mart and 20 or 30 bags. I can finish a deer in 3 or 4 hours. Its easy, ill never trust a processor again. Youtube helps if you don't know what you're doing.

I would find a new processor or do it myself. Doing it yourself is easy and satisfying.

Put me in the do it yourself camp. We have a cold storage log/facility. If we shoot a deer in the AM chances are by the afternoon hunt we are through or almost through processing it. Ive aged a bunch of deer on ice and in a fridge, I find it to do very little so we just process them asap.

The backstraps are probably close to 2 lbs a piece. Did they cut some of them up into steaks for you?

When I take a deer to be processed I always keep the tenders and straps. Too easy to do myself.

Could be this. Many will butterfly them and label them cutlets or steaks.

Yea I never give up the straps or tenders, I don't need to pay someone to bag them up for me.
