How much deboned meat do you usually get off a hind quarter? Shoulder? Just looking for estimates on lets say a 100-120 lb deer

Boned? Shoulder around 3-5 lbs, ham 11-15.

That's about right. I use live weight / 3. 120lbs yields 40lbs.


They make ammo specifically for hunting for a reason! nidea

This medium sized 8 i took last year near the brenham tx area, was just under 130lbs live weight,
before we gutted him, after saving straps, tenders, i got almost 43 lbs of boned out meat we took
to sausage market there in brenham! Now usually i pull one or 2 big roast off that main ham bone,
then the rest into sausage. Thats up to you, he was a full deer.

We saved all the junk trimmings, fat pockets you find on deer, and heart, lungs, all for catfish
bait. It keeps well if you seal the packs up from air if you use a plastic bag sealer types for food storage.

That formula is accurate to prior to deboning, at least it was close on my deer. The reason I asked this was because I got a number back on deboned meat from the processor that didn't sound right. I ended up going over there and talking to them and after a discussion we realized that there was some incorrect information on their end. Both of my hams ended up being around 19.5 lbs of deboned meat off a 103 lb doe. Originally they were saying only 8 off both hams which obviously wasn't correct. Simple paperwork error but it is resolved now.

This is an estimate of the last doe I cut up. Total are per side so double.

Hindquarter:
Top Round - 3 lbs
Bottom Round - 4 lbs
Eye of Round - 1 lbs
Tri-Tip - 4 lbs
Sirloin - 1 lbs
Trimmings - 1.5 lbs
Subtotal - 14.5 lbs

Forequarter - 6.5 lbs (I debone for grind)

Backstraps/Loins - 8 lbs

Total - 29 lbs

Most mammals bone out at between 45-48% of live weight. So a 100 lb deer will give about 45 lbs if you can get every little bit which is impossible. Figure 3-5 lbs for lost trimming and you'll get a little over 40 lbs from such a deer. At least that is based on my experience butchering all my own meat for more than 35 years.

I usually get a yield of 35-40%
Maybe a little more, if you really pick it for grind meat.
