For these ribs, I used a seasoning from La Michoacana...the same blend they use for their tablitas and fajitas...Grillmasters pork & chicken rubs works nicely as well.

We usually grill the ribs when we are making sausage.....nice way to chill and relax after all the work....ribs and cold beer....

That's great! Most of the guys I hunt with don't even mess with the ribs. You are right, not a bunch of meat, but very tasty!
