Based only on your first-hand experience, what wild animal or bird did you find most difficult to hunt and why?
For me, it would be Eastern Wild Turkeys while hunting with a shotgun. Nothing goes undetected by a turkey's eyes. As I heard a fellow turkey hunter once say, "If wild turkeys had a deer's nose, you would never see one."

Through all my years, I'd have to say Snipe. Been hunting them for years and have still yet to see one

Yep, it is the Snipe. Hard to see and they got to be the fastest flyer out ther. Shot placement is critical.

Bow hunting Nilgai on the king ranch. Easy with a gun, not so much with a arrow.

Ill have to say elk and pronghorn... mostly because they are on my want to list and I have yet to be able to even try yet.

Bow hunting Nilgai on the king ranch. Easy with a gun, not so much with a arrow. I would have to concur on nilgai. I hunted them at Laguna Atacosa and they were very difficult, even with a gun. These public land nilgai are VERY heavily hunted so they are wild as hell. Great eyesight, nose, and hearing. They run like a scalded ape at the slightest hint of danger. Made public land whitetail seem easy.

The American Woodcock , used to have quite a few on my old place. Those things would hold tight until you almost stepped on them them bust out straight up into the air.

Are we talking animals that arnt pressured or heavily hunted, scared to death every second animals?
I'd have to say either aoudad or elk have been the most challenging.
Stalking axis deer isn't very easy either.
For it is not the quarry that we truly seek, but the adventure.

Aoudad-free range in the Canyon Nilgai-high fence in south Texas AND high fence in Brady. Axis-high fence, low fence, no fence all over the state of Texas.
That order. I would assume elk hunting is similar to axis stalking.

Ruffed grouse solo in the WV foothills. It is a combination of the terrain and the fact that they will put the first obstacle between you and them. I shot a double once but only because I knew the thicket they hung in and sent a dude down to flush them my way. The places I hunted them was a mix of mature timber, grapevines, briar and mountain laurel.

Even though it's the hounds that do the hunting, both bobcats and foxes make for difficult hunts. I had family members who hunted them in decades past who made it clear to me that taking these animals was never the primary objective. In fact, it was very rare that they would even see the fox or bobcat the hounds were after. They were sports where the joy and excitement were entirely in listening to and appreciating the skill and tracking capabilities of each and every hound. These were much more different times too when no one frowned upon hounds, and their owners, making their way across large areas during the night. It was well before hunting and deer became the cash crop they are today.
