One of my favorites. When I actually had to work on Saturday and Sunday mornings we would chip in a get some Barbacoa. Corn tortillas and pico and sometimes menudo. Breakfast of champions and even cured hangovers.

Love me some barbacoa.

One of my favorite tacos is frying an egg with barbacoa then melting cheese into them while the egg fries.

The way I have had lengua around here is sliced.
I like it ok, but not near as good as barbacoa.

I am not a fan of lengua but I do like tripas. Just be careful cooking them over coals and starting a big grease fire.

So, tell us how you found this out Don? grin I love tripas if they're clean & crispy. food Pass on the chewy.

Lenqua is awesome when it's done right. I've had it in a few restaurants where it was nasty. Cut up in pieces like you said, a little tough, and flavor was off. When done right (to me) it is tender and sliced thin for tacos, looks like backstrap and excellent.

I’d had some lengua tacos about 35 years ago. Thought they were awesome, til I asked the taco lady “what’s barbacoa de lengua?

I think the best barbacoa I ever had one of my buddies made, it was amazing.

I never got into tripas or menudo, never tried it, never even seen what it looked like.
