I have a friend that has offered me the opportunity to shoot a "cull" aoudad. He's trying to thin the herd on his HF ranch. Does aoudad make decent table fare?

The only one I've ever eaten was an old male I killed 22 yrs ago and haven't touched one since.  I hear females are pretty good. I'd make the whole thing into snack sticks, summer sausage, & dried sausage. Should be fine.
