I am looking to make sausage and snack sticks. Am i supposed to mix the deer and hog together for each of these?
Also, I took all the fat off the hog and placed it in a bag. Can i use that with anything or just throw it away?

I usually trim most of it off and just toss it.....some folks deep fry it....

Not worth it to keep the fat, if you want fat to mix in use domestic hog fat.

As for the sausage, you can mix or not mix. I used to mix but nowadays when I make snack sticks & summer sausage I make all venison with no fat. When I make sausage (smoked, fresh, & pan) I prefer all pork with the fat, I like pork fat. Sometimes have to add some fat to my pork sausage if it's too lean, depends on the pig but 99 % of the time there is nothing wrong with feral pork fat. If you want, you can cut a little piece of fat off and drop it in a hot pan for the smell test.

If its good clean fat I don't see a problem using it, but make sure its fat and not shield etc. I would probably opt for some domestic fat.

As others stated, if it is clean fat use it. I have and have also supplemented with domestic fat to get to 15% to 20% ratio when making sausage. If you go to places like H-Mart and ask they usually have pork fat that is very well trimmed.

Used some pork fat from a small 125lb sow I got a few months ago. It was excellent. I think a lot of times it depends on what they are feeding on. The hogs I kill are roaming around 400 acres of oaks with acorns.

Used to get to go hunt around some chicken grower houses. Shot many hogs that ate a considerable amount of chicken guts, dead chickens, and manure scraped out of the chicken houses. Not something pretty to think about but they all ate good.

I have used it a lot with deer for Summer sausage and hamburger meat. I save it just for that reason
I once drank muddy water out of a hoof print and was dang glad to get it.

So when people say they use and 80/20 mix for snack sticks and summer sausage, how many pounds would that be equivalent to if I am looking to make a total 10b batch?
Also, all the fat is from the layering of the ribs. All white, thick fat that has been washed before vacuum sealed. Do I mix that portion with the venison or regular pork butt meat? Preferences?

That's 8 pounds lean and 2 pounds fat total 10 pounds. Yeah it's a preference thing brisket trim, pork butt, ground bacon pretty much whatever you like.

for snack sticks i usually do 5 lbs at a time, i do 3 lbs deer and 2 lbs hog.
