I think that the roast would also be good if you seared all sides in a hot cast iron pan and then cooked it for 8 hours in a crock pot. I think that I will take one for the team and give it a shot.

That works. But a crock pot roast and a pit cooked roast are really two different dishes with respect to texture and taste. Both are good. We prefer pit smoked.
