1st event with the new cooker, couldn't be happier. One of things my wife and I have started doing is help out at UNT Catholic Center by providing meals for their Thursday evening get togethers once in a while. College kids love home cooking, fellowship is good and it is a great thing for us to do as a family. Gumbo, Red beans, rice, garden salad, french bread and brownies. Don't how many thanks I got from staff and kids. Heard "this is the only decent meal I get all week" a couple times. If you have a chance to get involved with something like this at the teen or college level you should try it out, kids are fun.

Fed appx 90 people, 2 gallons of beans and 3 gallons of gumbo left. Everything else was gone.

10 gallons gumbo
One roaster of red beans, 6# dry
20 cups uncooked rice, cooked and panned.
2 Large pans salad. 6 bunches of leaf lettuce plus one head of iceberg, 10 tomatoes or so.
6 large loaves french bread, halved, sliced, buttered and browned.
6 brownie mixes


I'm not cajun, had to get this cookbook. Good place to start, I have been using it for 5-6 years.


8 chickens, 10# smoked sausage, 16 bell peppers, 3# onion, 2 celery bunches. Cheated and used boulion for the broth instead of making stock. I only have so much time.


10 cup oil, 10 cup flour - Don't burn that chit Kurtis!


16 bell pepper, 3# onion, 2 bunches of celery


Can you tell she's 13? Seriously though, she had a really good time.


4 gallons of chicken broth to fill, done and topped with a lil file powder. Forgot to take the dang okra...


6# dried kidneys with celery, onion, bell pepper plus some spices. First time in my life I made beans with no park, got a few vegetarians in the crowd.


Come and get it.


All done, just chillin.

Thanks. Cooking for a crowd isn't a big deal, just takes a little math, some time plus I really enjoy it. Probably had $200 in the meal, pretty good bang for the buck when you break it down by head count.

Looks great, about the only time I break out the Wash pot and cooker is for Brunswick stew, soon be time to make another one.
