Has anyone used umai dry bags to make salumi or any other cured meats?

I have used them for dry aging some whitetail backstraps, they worked good and I was happy with the outcome. I have access to a walk-in cooler so just hanging them for dry aging is easier. wacorusty on here has posted his rib-eyes that appear to have came out awesome.

I have the charceturie or whatever kit, just haven't used it yet. I want to make some pancetta or prosciutto. Here's one of the ribeye threads.
