Haven't had any tree rat since we lived on farm when I was a kid, dad liked them with dumplings. rifle

boars, dumplings ... gotta boil them to get tender.

German fried was always my favorite, roll in flour s&p, shallow pan with a little grease, covered until browned. taters & gravy.

Thai Style -

1 - Catch a RAT. Not many squirrels here.
2 - Skin and gut.
3 - Break open chest cavity
4 - Splay out fully open and coat with red curry sauce
5 - Let dry, coat again, let dry, coat again, let dry
6 - set up the charcoal grill
7 - grill each side ~5 minutes, longer if a BIG rat.
8 - Add a little fish sauce or duck sauce

Grab a Singha beer and enjoy!
