I had jalapeños in my chow-chow. I'm starting to freeze and save leftover cornbread for my thanksgiving dressing. See the curl on the edges of the cornbread? All great southern cooks know that you never put your oil in the mix. You pour it into a hot pan. The curl comes up immediately. Those peas were given to me already shelled back in the summer. I cooked the full gallon down with two ham hocks and froze them in pint size bags.
