Well the fire box on my beloved stick burner of 15+ years rusted off the other day, so decided to do a small brisket on my Weber Grill. Little 8lb packer, trimmed and rubbed with Kosher Salt and cracked black.

On she goes with a light mesquite smoke.


4 hrs on the grill (sure sounds weird), wrapped up tight in foil and put in oven for 4 more hours, then a long rest...in the fridge overnight until ready to slice.


Heated back up with some beans and in I went. Turned out better than I thought it would, perty darn good. Tender and great flavor. up

I'll be doing a few more this way, was good. Only trick is you REALLY have to babysit the heat/smoke. Stay on top of it and you're golden. I'm so used to cooking on my pit..

no need to babysit if you have a smokenator or a slow n sear for the Weber.

Looks good Skinner, I smoke stuff on my Weber all the time. My coal bed usually only takes up about 1/4 of the bottom but I keep the temp pretty low, and yes checking it once an hour can be a pain at times

Do this for a long consistent burn on your weber grill

I use wood chips vs. chunk wood, more consistent smoke and no flare ups

Close bottom/top vent nearly all the way, adjust heat from bottom vent if needed.

Anyone ever used the smoke-n-sear product in their kettle?

Thinking of selling my offset smoker before I move again and picking up a smoke-n-sear for my kettle as a substitute til I stop moving around for work...

Lookin good skinner i'd dive head first into it.

Had to use the same cooking method a lot in college because we didn't have a smoker, was able to turn out a lot of good eats that way.
