I would like someone to post a detailed recipe for jalapeno/bacon cream cheese dove. What do you marinate with and how do you cook it? I have tried dove several ways and it has always been super tough and gamey... I would like to try a different recipe to see if its possible to make dove taste good!!!

Soak them in brine overnight. Put seasonings and Worchester in brine. Wrap in bacon, put japaleno, onion and cream cheese under bacon. Cook until bacon is done. I leave breastbone on but have deboned them as well.

Deboning them makes a big difference. We don't brine them or anything and they are DELICIOUS! Watch parts 1 and 2

cook them too long and/or too fast, they will get tough, very tough ... My mom used to German fry them and our Labor day weekend dove hunt group would merely batter & deep fry. I had never heard of cooking them bacon wrapped on the pit until I was well into my late 30s.

as a marinade, I will soak in water over night (but suspect you could get really froggy with various mixtures of stuff), pat dry, I usually make a slice down each side of the breast bone, sliver of onion on one side, sliver of jalapeno on the other. I season a little softened cream cheese with black pepper, onion powder, garlic powder, smoked paprika ... and put a little of that mixture in with the onion/jap, then wrap with thick cut bacon, and into the smoker/pit, usually smoke/cook 180* for 45 minutes or so, drizzle a little BBQ sauce during the last 5-10 minutes and then put directly over hot coals to firm up the bacon.

most in my family are not overly fond of dove, so I don't hunt near as much as I used to ... and cook a few from time to time when I am home alone.

Soak in Italian dressing for 48 hours, cut up fresh jalapeņo stuff with cheese and wrap in bacon. Grill.

My wife will even eat it this way. I typically use some sort Cajun seasoning

In addition to the usual jalapeno/bacon-wrapped which is a time-tested favorite, I like them hot fried.

Filet the meat off the breast bone or debone like the video above- season with salt/pepper, dredge in flour, flash-fry in hot peanut oil.

The sauce is what makes it: melt some butter in a medium sauce pan (don't skimp). Mix in louisiana hot sauce, honey, garlic, and finely chopped parsley to taste. soon as the dove comes out of the fryer, dredge in the sauce, top with sliced fresh jalapenos and immediately.

I've done this with duck, deer, and wild hog also, all come out pretty good!

Marinate the breasts overnight with pineapple juice in a zip lock bag (can use orange juice as well.) I cut the jalepenos long ways in half and remove all the seeds and soak the jalepeno halves in ice cold water for 2 hours (removes all the heat.) Get jalepeno and fill with cream cheese, place breast on top and season breast with Uncle Chris' Steak Seasoning then wrap in bacon securing with toothpicks. Cook over hot grill till bacon is done. Enjoy!!!!!

Here's a different take on the traditional popper. He is using mashed roasted garlic instead of cream cheese and pablano pepper instead of jalapeno. I've never tried it but I might set aside a few doves this year to give it a whirl.
