I was in the Walmart at the corner of Parker and Preston in Plano today and found they had whole briskets for $1.64 per lb. I grabbed the two the had out since this was the lowest I've seen in quite some time.

I'm planing on making a whole lot of pastrami next week when it is cured in 5 days.

I use the pre brined corned beef brisket for my pastrami. Rinse and coat with black pepper. Then smoke. I buy them on clearance after some holiday, possibly Easter?

yep, Easter and St. Patrick's Day usually has corned beef briskets at our HEB, bought a couple and smoked then.

The two I got were 13# and 15#

That will make a lot of pastrami. I'll post pics when its all done. Curious what the final weight will be.
