just took them off theyve been cooking low and slow since 9:30 this morning and that big chunk of smoked jowl sure looks good! i'll get a pic posted up for yall in a bit! chef

You have never had them done right. Cooked well, very good beans for cornbread. Not cooked well, USN style Limas. Nobody can ruin Limas like USN cooks can ruin Limas.

We called them butter beans when I was growing up. There was even a song about a dowel f butter beans.

hmmm, isn't there a difference between Lima beans and butter beans? Lima beans are light greenish and Butter beans are tannish/off-white

Same bean. Dried limas will cook up almost white and soupy. Fresh or frozen baby limas are light green and cook up firm and stay green. No soup. Both are good.

huh! learned something today! I always thought they were two totally different types of bean ... but you are correct after a quick Google search. Good to know! And yes, I like them both ... pretty much any kind of bean for that matter, with green beans my least favorite.

Dried lima beans that are more flat and yellowish than the common rounded and green variety are often called “butter beans” in Southern States. In the South, lima beans and butter beans are considered to be two different types of bean, however, in their scientific name is the same and they are not two distinct species of bean.
