Hey, nows the time to save those bones, skin, boney pieces you were going to pitch in the trash can, nows the time put them all in a pot, 1 onion, some garlic, thyme, parsley, dash of salt, pepper, about gallon of water, boil for about hour so, bones at this time will all fall apart, and foam starts on the top of pot, then its ready for the noodles! Oh at the time carrots or celery or what ever you make soup with can go in this time.
Remove all meat from bones once cooled on counter, bones fertilizer for garden, compost pile, rest goes back in pot, add some egg noodles warm or simmer for 25min or so.
Man, you have pot of many meals here. Been doing this last 10yrs or so, get about 15 containers for small separtate meals for a later date.

I put water chestnuts and bamboo shoots in mine. I season with white vinegar and cayenne. I get the taste and texture of hot and sour soup. I boned my turkey first, then boiled the bones. My bones went with the trash last Tuesday.
I'll make 20 meals or so from my 14 pound turkey.

Here are my fixings. The stock and the boneless turkey meat was done Tuesday. The turnips mustard greens, and the cilantro came from my garden. I seem to never have enough juice in there.

Thanks for tip of celantro and others out there, will give that a try, headed to local market for some finish up spices.
House is smelling good here.....
