I got tired of the same old lunch sandwiches and made this up. I started with a thick slice of bologna, a slice of Swiss cheese, sauerkraut, and a couple slices of buttered bread.

I toasted the bread in a pan like Texas toast and melted the cheese on top. I put the kraut and bologna in the microwave for a half mi ute.

It all came together and tasted fine. I'll do it again.

I emailed the link to Cathy. This was her reply.

Looks good--but I agree that the bologna has to go. A good rueben has pastrami that is almost the consistency of butter--it is melting. Also, the bread should be rye bread.

Run it across a cast iron skillet and bologna is great.

Nothing wrong with bologna. Ate more than my share in my life. Sounds good Bill, will have to try it your way.

Bill, You ought to try that with some Spam. Except, pan fry the Spam first, then make the sandwich and grill it.

I've never made that exact sandwich, (no kraut for me), but a fried Spam and cheese grilled sandwich is pretty good! Try it with cheddar.

Been doing it for years. I can't see using corned beef and covered it with all the other stuff. I have corned beef on its own and then use bologna. I mix up Russian dressing with the Sauerkraut.

I think I will have try it, but with a better brand of Bologna. They carry some quality beef bologna in some of the delis. Bar-S products are pretty low on the quality list....... Sorry Bill.

I still give it a "Thumbs Up".

That's the only thick cut I can find. I started it when my tomatoes were in, but not to worry. I have kraut leftover, so I got a half pound of pastrami this morning. I've done that several times.

Jewish rye bread, good kraut, swiss or gruyere, pastrami, and Russian or Thousand Island dressing. Butter the bread and heat the whole thing in a skillet, both sides.

Not a fan of the bologna made with chicken, or hot dogs made with it either.
I do like the beef versions of both, though.

my dad was the king of weird stuff to eat, so I have partaken in any type of sandwich meats known to mankind. about the only one I couldn't do, was goose liver loaf (gack!). Fried bologna, salami, spam ... all good eating to me.

looks good to me Bill ... but I don't think I would call bologna with swiss and kraut on toasted white bread a Reuben.

There is quite a difference. I got a half point of pastrami and had my third for real Rumen for lunch today. They are great.

Restaurant I work for did a bacon burger a while back 1.5" thick smoked ground bacon patty seared to finish off. Thought I died and went to heaven.
