Lots of different ways to do them, but this is how I like to do them & pretty simple. Rub it down good with margarine (meat side), dust it with Tony's or Slap Ya Mamma's, top with a layer of onions and sliced lemons. I didn't have any lemons here but normally do. Grill shell side down until meat turns white. Enjoy.

I do about the same except I spray the scales with Pam. I try to get a little more color by adding paprika or chili powder. Serve with seasoned butter.

You can even do it with specks. Here's one that shows the paprika. You can tell when they're done because you just can.

Looks great Bill. That's kind of you but the redfish is better. I love redfish, but prefer specs. They've always been my favorite. Guess they just hold a special little place, in my heart even over flounder and a list of other awesome eaters.

If you cover the redfish slabs with aluminum foil it will help speed up the time to fully cook and keep it moist at the same time.

skinner what time is dinner? I wish I had some more! Need to go fishing..... I have been thinking about this thread the last two days. I am out of reds and am toying with the idea of making a Central Market run to buy some. I wish I lived less than a 6 hour drive to the coast.

I did it one time with some hybrids, that a friend gave to me, but I like the saltwater fish the best. My favorites are redfish, snapper, and specks, in that order.

Those are all great Bill, but years ago I learned to love Sheepshead on the table better than most. Growing up in my family they were always considered a trash fish and were given away. A lot of folks just don't like to clean them. Kinda like pigs. That meat is pure white, very good texture, very good taste, just awesome and fun to catch but not always easy. IMO they are right there with Triple Tail and Mangrove Snapper and I like the Mangroves better than the reds, dog/mutton snapper, vermillions, Lane etc. Trigger Fish and Angel Fish are also excellent on the table, but are often overlooked because they are harder to clean. Anyway, a whole gutted/gilled/stuffed Sheepshead on the pit or Sheepshead on the half shell is some damn good eating. I shake my head when I think about both of my Grandpas and my Dad giving them away. Every time I eat a freshwater fish I am looking for some seasoning or something to put on it.

We wrap ours fully in aluminum foil after a liberal dose of Tony's,garlic powder, lemon pepper seasoning a dob of butter and some onion peels and a squeeze of lemon juice and then grill the till they start to flake. I like to make a sauce to put over them also. Sautee some shrimp, green onions and a stick of butter then add a can of cream of celery soup after cooking that for about 5 min.then add a pint or half pint of heavy whipping cream and simmer a few more minutes then add a dose of grated parmesan cheese and simmer till melted you can also add some Tonys in for seasoning. Don't go too heavy on the cheese or it will clump up. Spoon that over the fish when it is done and eat till you cant move. Also some hot breadsticks go really well with that.

You can't mess up redfish on the half shell. I've had it cave man style, just fire, and it was great.

Good eats, but they are a pain to clean. And you get just about the same amount of meat off a barely legal one as you do one that is 5 or 6 inches longer.

They are not hard to clean if you do it right. Never attempt to cut through the ribs. First start at the head or back near the dorsal fin. Fillet the entire side except for the ribs. Next, grab the tail and bend it back over the head, thus pulling the ribs away from the backbone. Repeat with the other side.
The backbone makes a great stock.

They're really not hard at all to clean. I clean my redfish, black drum, sheepshead the same. Sharp filet knife, make cut behind head/gills...use tip of knife to make small cut down the back from head to tail (with the scales)...then filet until you hit the spine...turn knife tip down to start lower half of filet and then just filet the meat right over the top of the ribs. Trim up (feel for small bones) & leave on half shell or filet off skin whatever your choice. Once you get the hang of it you can clean a limit pretty quick. Sometimes I cut through the rib cage if I'm in the mood for rib meat with the half shell. The throats are also awesome, I just don't feed any meat with bones to little ones or newbies.
