Started brining two birds Tuesday night. Put some onion and garlic in the 24 lb'r and rubbed it down with EVO and my rub. Added a few slices of bacon and a stick of butter. Put on some pecan chips and oak coal at 10 last night, tried to keep it around 250, but I kept falling asleep watching Peaky Blinders. Almost ready to pull off and rest. Emma helped rub the smaller one down this morning to put in the oiless fryer.
