How thick will steel target have to Be to hold a 338lm 300gr bullet without blowing through it? And what's a good distance to not worry about target damage.

Got some firehose to mount it like Jason's targets

I think the hardness of the steel has just as much to do with it as the thickness. But I've seen them made out of hardened 5/8" and they held up good.

1/2" AR500 ought to hold it fine, I believe that round will be less than 3,000 FPS correct?

Minimum 100 yards and yes 1/2" ar500 should be fine.

Run it out to 338 LM ranges and AR 500 isnt necessary, mild 1/2" will work.

However, I have a new standing order on my range that the 338 LM shall not hit my steel inside 600 yards. The steel holds up, but the fire hose and the target stand can not.

My 338/378 is down waiting for a rebarrel, but the last time I took it out was with 285 gr. Hornady's at 3000 fps. A 10" round 3/8" thick AR-500 plate just about swung all the way over the bar, but otherwise suffered no damage whatsoever. I don't expect it to be much different at closer ranges. The only two things that have caused any real damage to our AR-500 plates (all 3/8") are 5.56 ball which potmarks the thing, and 50 BMG ball (@ 250 yards) which dents the hell out of it.
