Just like all bbq, its about timing. Hard 8 has a bad habit of serving stuff that has sat on that over heated pit too long. Sometimes I think they have that thing ripping at 350 degrees. I would think 160 would suffice for a couple of hours.
I have had good meals at all of the hard 8 locations. Just go for an early lunch at 11 or an early dinner at 4:30.

Best way to do Pecan Lodge is to go with the family or a group of buddies. If you order 5 or more pounds of meat, you can go right to the express line. Since they instituted the express line, I haven't had to wait for more than 10 minutes. Pretty easy for 3-4 guys to tear up 5+ pounds of top notch barbecue.

Went Lockharts the other night. Dang good brisket. They sold out of everything just before 8 on a Tuesday night and were busy nonstop.

I ate at Hard 8 the other day. Thought the poppers were awesome and St. Louis ribs were good. If go there get the corn bread salad to mix with the beans and the banana pudding is awesome!

Had hard 8 in he colony the other day was decent but not great. Have made better brisket from my smoker. Chicken was pretty good and the kids like the sausage but let's face it sausage is almost impossible to screw up.

Had hard 8 in coppell a few years ago and thought it was better. Much more flavor.

if you go too early u might get re run bbq, left over from yesterday. that's why the ones who run out are the best
