I decided to try something a bit different with the Grouse I got in NM this year as last years legs were a bit over done when I cooked the birds whole on the pellet grill.
This year I cut the breasts into strips, seasoned, battered and fried them and they were great. I cooked the legs on the Traeger with Hickory pellets and then did Garlic Parmesan for the wife and used Franks Hot Wing sauce for mine. They were tender and delicious! I love finding new ways to cook and present my wild game harvests.
