I bought a Lansky some 28 years ago, and it has been the best sharpener I've used. A few of the stones broke last year, and I bought a new one. For the money, and being idiot proof, it is what I would recommend. Spend some quality time with the lansky and your favorite hunting knife, and you will be able to shave with it afterwards.

I bought a Tormek T7 about a year ago and love it! They’re expensive but I would buy it again. I’ve never had great results with anything else, and I own about 7-8 other sharpeners.

For a complete idiot proof sharpening system I highly recommend the SpyderCo Tri-Angle Sharpmaker. If you can make a cutting motion with a knife then you can sharpen one on this system. I have been using it for about 8 years and can make my knives shaving sharp in a matter of minutes.

If you have a Scandi or similar bevel, the bevel is high enough to feel the angle during sharpening - no jigs or devices needed other than a moderately skilled hand and a brain. Once the knife leaves the stone, hone it on a leather stop loaded with cutting compound. What you'll end up with is a very low angle and very sharp working bevel that is sharper than all other higher angle beveled knives.

That's the Lansky sharpening system that I use. It works great for me, good quality and it comes boxed, which I like.
Pretty good system for the money.

Go buy a diamond "stone" and a mora knife. The blades are not too thick, sharpen easy, and they are cheap, then practice. You will end up with less money tied up total, a good knife, a new skill, and an understanding of blade material and geometry.

Buy the services of a knife sharpener at a gun show. Every few years I take 3-4 and in about fifteen minutes and $20.00 I have all my knives polished and sharp as a surgeon's scalpel. I've had a few of the systems mentioned above, and they all work. It's the whole time value of money decision for me. I will be in the neighborhood of House of Blades Saturday. I'm gonna let them have a go at my skinning and quartering knives. They use a diamond wheel and finish on a compressed paper polishing wheel. I'll post a review.

I agree with the Lansky. For a quick edge in the field I carry a 6 in foldable sharp-stick. Been through plenty. Still works.

I have a handful of those plastic sharpeners for knives and broadheads. Keep em' in my pack, in my trucks, in the kitchen drawer. Good for the guy who wants to clean up the edge while doing chores like skinning, butchering or cutting rope. I used to sit and hone and strop but too lazy and busy it seems.

Go to House of Blades. For a few $'s and 10 minutes you'll walk out with a knife that has a fantastic edge. Gun Shows will offer the same service but you gotta pay to get in and sometimes to park. I took four knives, and for less than $20.00 I walked out in about 1/2 hour.

OK, I'm here to help. If you want the ultimate idiot proof sharpening system out there you will need to buy 3 items.

1st. A Lansky Arkansas Sharpening Kit to cut an edge in the steel. Also, buy the Course and Fine Diamond Stones to complete the kit. Use the Course diamond to shape the blade edge then the Fine diamond to smooth the edge, then finish using the Arkansas stones Arkansas Stone Kit
Individual Diamond Stones

2nd Buy a Smith's Adjustable Angle Pull Thru Knife Sharpener to Maintain the edge. I only use the Ceramic slot myself to touch-up the edge while cleaning game. For instance, went to the Coast fishing and would use the Ceramic slot to re-sharpen after I cleaned each Red Fish. Whats cool is you can adjust the angle to match the edge you cut into the blade with the Lansky System. For my blade I'm touching up, I pull the blade across the Ceramic slot 10 strokes. Smith Adjustable Angle Pull Thru Knife Sharpener

3rd. Buy a Strop Board to put that final edge on the blade. After I use the Smith's Sharpener, I run the blade across a Strop Board that has white Rouge on side #1 and Red Jewelers Rouge on side #2. For me I strop the blade 4-passes Heel-to-Tip, then 4-passes Tip-to-Heel on one side of the blade then repeat for the other side of the blade, using the white rouge side 1st, the flipping the strop over and using the red rouge side in the same manner. Long Strop with White and Green Rouge

Step 1. Cutting an Edge in a new blade takes about 45min to an hour the first time.
Step 2. Using the Smith's sharpener takes about 30 seconds.
Step 3. Using the Strop take about a minute for both the white and red rouge.

Of course you can always bypass all this and just buy a Havalon Baracuta with a buch of extra blades? Baracuta-Blaze

I either have or have had most of those things. I'm a knife and sharpening junkie and prefer blades of high carbon steel. I don't care for most of them but generally start with my motorized wheels like the guys at the Gun shows use. Then I finish with a strop. BTW, just ordered new wheels and grit. Noticed that the motor was built in 1983.

Some knives with junk SS blades are a character builder to sharpen.

I have an Edge Pro Apex for when I need to accurately profile the edge, but honestly...its pretty hard to beat using stones. Once you learn how to use stones (yes it takes some practice) their utility is hard to match.

The Apex (and like competitors) are good for establishing precise blade angles (half the battle), but once you've done that... all that is left to do is to create a 'burr' edge, remove that and then strop. Doesn't matter how you accomplish that, folks use different products and methods...but that is what needs to happen. Much easier to do that freehand on a stone (provided you can control your angle).

I use Japanese Water Stones quite a bit.
