Got to do a little fishing this weekend. Caught some reds had a good trip and my little boy reeled one in with the rod in the holder. My little girl went with us on the boat for the first time.

That's great. You have probably filled them by now, but I can do it with a standard fillet knife. First you fillet all the meat from the body and the shoulders, leaving only the ribs. Next grab the tail and pull the fillet over the gills while pulling it away from the body. The ribs will pull away from the backbone. You can cook it that way on the grill or skin it.

Never particularly cared for filleting redfish, but have never used anything other than just a regular old fillet knife. May give your technique a try next time bill.

Try them with skin and scales on the grill, with drawn butter. I learned too late in life that you could do the same with specks. Here you go.

Grilled and blackened is my favorite way to eat reds. I don't like freezing them with the skin on, so these will likely be blackened. Im going to fry some catfish this week, will have to set out a few fillets of these reds to blacken, if it comes out good im sure yal will have to look at pics of it lol.

I've grilled them skinned. Just spray them with Pam and don't turn them. Always sprinkle the top with paprika or regular chili powder for color. Serve with drawn butter
