Just core and slice the jalapeños, make a sweet brine, 60/40 water to vinegar, and pour over the jalapeños slices. You can add onions,or carrots.

SpitFire (my beautiful bride) buys the large jars of sliced nacho jalapenos then drains all peppers with the juice into a large bowl. Add 4 cups of sugar. Stir it up real good and place in the refrigerator. Stir once a day for a week then put the peppers back in the jar and as much juice as will fit.

Then when we fry catfish she will strain some sweetened jalapenos, toss them into a bag cornmeal mix then drop them into the grease....better than fried okra.....

Just one large jar. The contents with 4 cups of sugar wont fit in the jar which is why you have to put everything in a large bowl for a week stirring daily. Then after the week place the peppers and as much "juice" as will fit back into the jar.

Here is our recipe using fresh ingredients.

Half pound fresh jalapenos
5 fresh onion rings
2 cups of sugar
1 cup vinegar

Remove stems and slice jalapenos, remove seed for milder flavor. Cut onion rings in quarters.

Mix sugar and vinegar in a sauce pan, bring to a boil stirring until sugar is dissolved and temp reaches 225.

Add jalapenos and sliced onions, stirring and simmering for about 5 minutes. Do not let the sugar burn/scorch. If too thick add tablespoon of water.

Spoon the jalapenos into a jar, then pour in the syrup. Seal and refrigerate for 24 hours.
