I whupped up the poor man's version of surf and turf tonight. Rather than rainbow trout and a slice of ribeye steak, I pan fried a catfish I just caught (after dipping it in beer batter, of course) in bacon grease. As soon as the fish was done, I dropped a slice of meatloaf in the hot grease, gave it 30 seconds on each side, plated it all up and ate it up! Pone of cornbread on the side baked up in a 110 year old iron skillet. YUMMM!

Guy, I ate everything but the pan I fried the fish and meat loaf in and the old iron skillet! Picture a fillet of catfish all nice and brown from the pan frying; then imagine a slice of meatloaf cooked in the same grease the catfish was cooked in; then a round pone of cornbread baked in a super hot oven in an old iron skillet and you've got it! It never occurs to me to take pictures of the meals I cook; I'm too busy thinking about eating them. I do have a picture of a couple of loaves of French Bread that I baked a couple of days ago. . .
