Pretty much my favorite fish to catch and eat. What are yalls tricks and techniques for frying them up?

Pour some mustard in a bowl and put several shakes of Louisiana Red Hot Sauce (not Tabasco] in, then stir. Coat fish with mixture and let sit while you get everything else ready. When oil is right, dredge the fish in yellow corn meal that is seasoned to taste and cook the fish. I like salt, pepper and some garlic salt in the meal.

Cornmeal, flour, and black pepper....rinse the fish....toss it into a Ziploc bag with the cornmeal mix and shake well....drop into hot grease and don't over cook it.....

We fry sliced nacho jalapenos in the same mix.... food

This with or without the red hot sauce. I usually throw the rinsed and patted dry fillets into a big mixing bowl & sprinkle fillets with tonys, then squirt enough mustard to coat them all, mix that all around and let sit while getting fries and puuppies done. Then I coat them in tonys or zattarains fish fry and throw in fryer, comes out perfectly battered all the way around and tastes awesome.

keep it cold. Trim all skin and red meat off. I cut pieces to a 1/2 inch or less thick. Zatarans crispy southern fish fry with lemon and fry till crisp.

all we use is Lousiana seasoned catfish fry you dont have to add anything and you dont have to dr your fish....Best fry mix on the planet easily drop it in the meal then drop it in the grease.

Just good yellow cornmeal salt and pepper grease 375 degrees

Yeah the old shack and bake idea from the 70s!! You don't do an egg wash befor you toss in the ziplock?
