I am smoking some chicken thighs this evening.
Iím gonna try them with skin removed this time.
I didnít want to waste the chicken thigh skin, so I seasoned it and baked it till it was crispy,like chicken bacon.
I then made lettuce wraps out of it with chunky guacamole,tomatoes, and a big squirt of lime and salt and pepper.
Wasnít too bad.

Iím using a Master Built Electric smoker.
I have never been happy with the skin when I have smoked the chicken.
It is somewhat rubbery and donít crisp up like I like it, when I grill the chicken.
I tried it with out the skin, and the thighs were great.
Wife really enjoyed them.
Moist and flavorful with a nice smoked taste.




I know you can grill the chicken after you smoke it to crisp up the sky n, but I had other stuff to do.

Looks good. You can also take the thigh skin and stuff with shredded cabbage, carrots, and pork and fry them as eggrolls.

Pull the chicken and put it in a hot oven or broiler for just a minute to crisp the skin.
