I really don't understand why you skinned the thighs to smoke them.
Iím using a Master Built Electric smoker.
I have never been happy with the skin when I have smoked the chicken.
It is somewhat rubbery and donít crisp up like I like it, when I grill the chicken.
I tried it with out the skin, and the thighs were great.
Wife really enjoyed them.
Moist and flavorful with a nice smoked taste.
I know you can grill the chicken after you smoke it to crisp up the sky n, but I had other stuff to do.
