Awesome! Sure looks better than my 1.79 on special brisket I got on right now. Been going since 5:30 last night. Along with chicken, 2 racks of spare ribs and 2 pork tenderloins all for a grandson's graduation party.

I'm sure those will eat great! I hardly ever spoil myself like that but was at a specialty butcher shop in McKinney after speaking at a conference and couldn't help myself.

This Monday the 28th Snake River farms will ship me 2 wagyu briskets for my daughters college graduation BBQ were doing. They were on sale for $125 each and 13-14 pounders. If they are as good as advertised I'll be ordering 3 more for my 50th B-day this July....gonna get drunk and pig out!

Thick kosher salt and cracked black pepper only - smoked at 225-250 over pecan or hickory or oak (I prefer pecan) until 160 degrees, then wrap in peach butcher paper and place back on at 250 until internal temp hits 190-195 for wagyu - 200-205 for prime/choice. Rest for 1-2 hours then enjoy!

Got my briskets today From SRF. They are the same cut that Franklin BBQ in Austin Tx uses. SRF actually sells another cut that cost more than the ones I got but geez, you gotta stop somewhere! And I cannot wait to compare them to Costco prime brisket I usually get.
