I did two fat chickens on The Masterbuilt smoker with JD whiskey barrel chips yesterday. They were brined and rubbed with my sweetrub. I stuffed them with a fresh pineapple spear, a big fresh jap, a big chunk of apple and half a lime.
They turned out great! We made fancy chicken salad after eating what we wanted. I smoked them in a pan because of all the moisture. Next time Iíll put them on a rack in the pan to elevate them above the drippings and add a thick slice of onion.
