Because grill marks mean absolutely nothing and the wind is blowing like crazy here and I didn't want coals from the fire box to come up from beneath

Just curious. I do wrap sometimes if my wood is putting out too much snoke. Don't want to taste nothing but smoke. I never turn a brisket.

i keep my smoke to a minimum which can be trying sometimes lol
