That was an eight ounce tenderloin that I grilled for dinner last night. I never eat the whole thing. I start with cilantro from my garden.



That's a wives tale about putting an avocado seed in guacamole to keep it fresh. I had this Friday night..



I make the total fajita dish in a pan on my stovetop.



My chips are warming in the over.



I'll put it all together after I finish my martini.

Eating good does not always denote eating big. I made two fajitas from that leftover steak. I'll have my second one with nachos Wednesday. I made the same dish when my daughter and her husband were here during the holidays. I added a boneless chicken breast that was grilled to medium. It took on the same texture.

One more thing! This is a dish that you can use to satisfy all the preferences about cooking time. My steak was medium rare. I could have left it in the pan to medium well or even well done.
