A food truck owner friend just had a supplier mistakenly deliver 3 legs of lamb today. This isn't the kind of place that serves leg-of-lamb (it's an ice cream truck).
She has asked if I can do anything with them. Any suggestions? Can lamb be smoked? Should I treat it just like any other protein?
I've eaten lamb before and I cannot remember it being all that delicious. Guess I could always punt and grind it into a sausage but that seems like a waste. Any wisdom?

Lamb plus beef and pork make excellent meatballs. That's just a few seasonings from sausage.
Chile is meat and chilies.
Lamb stew.
Lamb chops on the grill.

My neighbor gave me a leg of Lamb and I did something like this video. I inserted smaller chunks of garlic and rosemary on both sides and added sea salt and pepper, it was delicious

I am not overly fond of lamb/sheep ... but smoke it long enough, low and slow, and some of the twang seems to come out or is disguised.

Once is a while the Flight Attendant would get Lamb chops catered. looked like small T-Bones. They were very good.

I suck at cooking lamb. Post up your results! I've got one in the brine now. Going to let it cure, then cover it in pepper, and hit it with smoke. Not sure Little Bo-Peep would approve but this lamb is on its way to becoming pastrami.

My favorite is making a Gyro roast. Take a boned out leg of lamb and pound it flat and then take a large round steak and season them up with garlic, rosemary, salt and pepper and cover them with olive oil. Lay one on top the other and roll them up tight into a nice roast and tie them up with string. Cook to a medium rare and we serve this up sliced in pita bread with a freshly made cucumber sauce. You will have the neighbors wondering what that fantastic smell is during the cook.

I've tried lamb and mutton both a long time ago, and couldn't get them to where it was something I really wanted to eat. Finally made jerky and it was palatable. Adding a little jerky seasoning and jalapeno made all the difference.
