You need to have a mint sauce to go with it. My wife makes the sauce from the mint in the garden. Cook in oven at 350 until medium well, not bloody.

Did a Gyro roast yesterday that turned out great. Boned out leg of Lamb and roundsteak, both pounded with a mallet, seasoned and round steak laid on top of the Lamb and then both rolled up tightly together and then tied with string. Cooked on the Traeger at 350 until meat hit 140. Rested for 15 mins and then sliced thin. Served with home made Tzatziki sauce, chopped tomatoes, red onion and Feta cheese. Opa!

I got some ground lamb from a buddy and I had a little left over pork loin from another recipe. So I grounded it up and mixed it with the lamb meat. Topped it with smoked havarti cheese, green chiles, on a wheat kaiser roll smothered with a homemade garlic aioli.
