Have a small pork shoulder going in the Instant Pot. First time with the recipe. Fingers crossed.

2 tablespoons paprika
1 tablespoon garlic powder
1 tablespoons sea salt
1 tablespoon brown sugar
1 teaspoon chili powder
1 teaspoon ground mustard
1 tablespoon extra virgin olive oil
1 cup Coca-Cola
1 cup water
2 tablespoons Worcestershire sauce

I used chicken broth rather than water, added some BBQ sauce and some liquid smoke.

1.5 hours in the Instant Pot.

Assuming this is a domestic pork but I would never add oil or butter etc. that thing should have plenty of grease to it, but the seasonings sound like a classic win on pork!

I'm with ya on the oil/butter thing. In this case though it was a small amount used in the initial browning ("Saute" setting on the Instant Pot) to keep from burning/sticking before switching to the meat pressure cooker setting.

Sorry for no pics but it all came apart trying to remove it from the pot. It really wasn't impressive looking in any way though. I'll get pics next time.

Next time try running that can of chipotle thru a blender to make a thin paste. Whip up some dry sweet rub with dark brown sugar, SPG and maybe some cumin. Paint the shoulder with the paste and pack your rub into it. In the pot w/o liquid and you might get a nice smokey bark. Then remove and pull. It'll be much less soupy. Put it on a trivet in the pot for best results.

Not sure if the instapot will be the similar, but my gripe with cooking in a pressure cooker was that everything came out looking nekid/no color to it. I like a good sear or crisp etc. and a pressure cooker is just the opposite of that in my experience.

raising this from months ago ... recently we got an instapot and I have done a few recipes that came out tasting very good. I will have to get the recipes for ya'll if interested. One was for thick pork chops, another was for pork loin and another was for boneless chicken breasts. I have been amazed at how short of a time it takes to cook stuff and still get some color to it. most recipes call for using the saute and pressure cooker portion for various different effects.

used it again over the weekend on a rack of ribs ... I was VERY skeptical but they came out tender and great taste, less than an hour total prep and cooking. I was shocked at how well they turned out.

I'll gather up the recipes I've tried and post up later this week.

ok, this is the 3rd time doing ribs in the instapot and I am very happy with the outcome.

dry rub:
1/2 tablespoon dry mustard
2 tablespoons smoked paprika
3 tablespoons brown sugar
1 tablespoon onion powder
1 tablespoon garlic powder
2 tablespoon ground black pepper
2 teaspoons salt
1/2 teaspoon cayenne pepper
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon cumin

cooking ingredients:
2 racks of pork ribs (I had one each, St. Louis & baby back)
1 cup beef broth
1/2 cup apple juice
1/4 cup apple cider vinegar
1/4 cup lime juice
2 tablespoon liquid smoke

BBQ sauce:
1 1/2 cup BBQ sauce (I used Sweet Baby Rays)
1 tablespoon apple cider vinegae
1 tablespoon lime juice

1. Prepare the dry rub by combining all the dry rub ingredients together in a small bowl and thoroughly mixing.
2. Remove the membrane from the back of the ribs with a paper towel. (I rarely do this step)
3. Season the baby back ribs with the dry rub generously on both sides.
4. Place the ribs inside the Instant Pot, standing up and wrapping around the sides of the intapot.
5. Pour the beef broth, apple juice, apple cider vinegar and liquid smoke inside the Instant pot, no need to stir. Close the lid (follow the manufacturer's guide for instructions on how to close the instant pot lid). Set the Instant Pot to the Meat/Stew setting and set the timer to 25 minutes.
6. Once the Instant Pot cycle is complete, wait until the natural release cycle is complete, should take about 15 minutes. Follow the manufacturer's guide for quick release, if in a rush. Carefully unlock and remove the lid from the instant pot.

While the ribs are cooking prepare the BBQ sauce, the vinegar and lime juice is to thin the sauce for a glazing sauce.

Carefully remove the ribs from the Instant Pot and place them onto a baking sheet. Brush them generously with the prepared BBQ sauce on both sides, sprinkle a bit more rub on the top side and place under the broiler for about 5 minutes. Keep the door to your oven open while broiling the ribs and keep an eye on them, because they could burn quickly.

Serve with leftover BBQ sauce. [Linked Image]

Did the wire rack in the bottom of the pot come with the Instant Pot? I don't recall one coming with mine.

I once drank muddy water out of a hoof print and was dang glad to get it.
