Need ideas/recipes for hog meat

Hey guys, as you may have seen, I just returned from my 2nd trip to HUNTERS CREEK RANCH. It was another SUCCESSFUL hunt. We brought back a total of 27 pigs!
We enjoy processing our own meat. We have been doing it for the past 16 yrs and have tried all sorts of recipes. This year we have already made: 150 lbs of Jimmy Deans Breakfast Sausage. 50lbs of smoked pepper sticks with high temp. Pepperjack Cheese in them. 25lbs of Spicy Italian Brats with high temp Mozzarella Cheese in them 25lbs of Beer Brats 25lbs of Summer Sausage with High Temp Cheddar cheese in them.
And we still have about 130lbs of meat left to do. So does anyone have any GREAT sausage recipes out there?
Some other ideas we have done in the past have been: Andouille sausage brats with Jambalaya mixed in (sort of like a Boudin sausage) Polish dog with sauerkraut mixed in Brats with apple pie filling mixed in (great for breakfast) pepperoni sticks just to name a few!
Anyone care to share some of their recipes?

I use this recipe for Bratwurst. http://forum.gon.com/showthread.php?t=776531I think mixing in sauerkraut would be delicious. I also just use ground pork in spaghetti sauce and chili.

There are some good ideas in the Recipe Section on this forum. I take the meat from larger (tougher) hogs and grind it. In just about anything that's highly seasoned it works just as well as ground beef. Try it in spaghetti, chili, meat loaf, lasagna, etc. I'm due to make Shepard's Pie this weekend. I also cook it in a mustard sauce that hasn't drawn any complaints.

During deer season if I get a hog I try to take a deer as well, a fat doe is nice. I take both to my processor and mix the hog and deer together half of each and put it in smoked sausage for the pit. This saves me from having to buy their pork.

Polish Kielbasa
•4 pounds wild pig •36 grams kosher salt, about 2 tablespoons. •5 grams Instacure No. 1, about 1 teaspoon. (Mortans Tenderquick) •5 grams ground black pepper, about 2 teaspoons. •3 grams dried marjoram, about 2 teaspoons. (I like a little more) •10 grams sugar, about 2 teaspoons. •6 garlic cloves, minced.

My favorite and easiest recipe.
1) Hog meat. Any amount, any cut. Not ground. 2) Bottle of bbq sauce. 3) crock pot
Directions: Put meat in crock pot. Put bbq sauce on meat. Set to low. Come back 10 hours later. Put meat in tortilla. Eat.

I forgot to mention we also have made pineapple brats (crushed pineapples and pineapple juice inside), a German brat with diced potatoes inside. Of course, can't forget beer brats with pepper jack cheese inside.
We have also done some pulled pork and smoked loins. Had my Mexican buddy make us some homemade carnitas.
Over the past 17 yrs of hunting pigs in Texas and Oklahoma we have tried numerous recipes and most of them came out pretty tasty! Lol

That Jimmy Dean recipe is interesting. I have a breakfast sausage recipe everyone raves about but it doesn't have coriander. I might try that. Also the JD recipe doesn't have any sugar, but most breakfast sausage recipes do. The amounts look low on the JD recipe though. For instance, 1/4 t rubbed sage for 1lb meat, where as I use 4T for 7 lbs meat. (There are 3 t in a T, so I'm using 48x as much sage for 7x meat)
My recipe:
Recipe for 7 pounds meat
3T Salt 4T Rubbed Sage 7T Brown Sugar 1T Red Pepper Flakes(heaping) 2t Red Pepper 2t Black Pepper 1T Accent
As others have said, check the recipe forum for many more ideas. My favorites are burgers, chili, smoked hams, and BS jerky
