My sons been hounding me to make my meatballs since we picked his elk up from the processor last month!
Finally got to it, just a simple recipe.
2lbs ground Elk
1lb Elk pan sausage
1/2 diced onion & bell pepper
1/2 cup of grated parmesian
3 tbsp minced garlic
1/2 cup Italian bread crumbs
2tbsp McCormick beef rub
All mixed together, chilled for a couple hrs and roll into meatballs(by hand, so their not perfect)
Usually cooked in oven for about 35 minutes but the wife bought me a Treager Grill for Christmas, so I've been cooking everything on the grill.. Love that thing......
I put them on smoke mode for 15 minutes and then cooked for 35-40 minutes on the grill with Mesquite pellets loaded.
He loved them and the wife & I had no complaints either..
