Skinner back, your venison roast post made me try to smoke a whole venison front quarter.
It turned out pretty good. I seasoned it good with a rub, then smoked it for about 2 hours. I then put it in a pan with onions, jalapeños,celery,carrots. I poured a bottle of bbq sauce on top of the venison.Filled the pan with beef broth and a beer. I sealed the pan and smoked it for about 4-5 more hours.
I also made some stuffed jalapeños, venison German sausage, and made a broccoli cauliflower salad. Turned out pretty good. I also had a big pot of beans, but I failed to take a pic of them.
