I just got a deer out of my processor and didn't get NEAR the amount of meat as I was expecting. Now, I had jerky had him make Jerky and pepper sticks made this time which I have never had done before.

I guess my question is how much raw meat to make a pound of jerky?

When I make beef jerky I figure 3lbs. of meat nets 1lb. of jerky.

As far as raw boned and clean meat, a good average is 30lbs of meat for an average sized buck. For sausage usually about 25% pork is added. Not sure on jerky but thought I'd just put that other info out there.

My research is showing 3 to 4 lbs for each lbs of jerky, so I guess that explains that. Would snack sticks have the same yield?
