Been a while....gonna make a pot this week.....I use thighs instead of breast now....works much better!

Everything you need.....I used 5 cups of broth, 1 yellow onion, 4 celery sticks, 6 chicken thighs, 2 lbs of velveeta, and a jar of diced jalapenos.....


Everything chopped up.....usually I use fresh jalapenos but the ones at the store didn't look all that great so I grabbed a jar of diced.......the smaller you cut up the cheese the faster and smoother it melts into the soup and help prevent scorching on the bottom of the pan....


Vegies and broth in the pot.....sometimes I lightly brown the chicken before adding it to the pot....


Notice its still mostly uncooked....just lightly browned......

Chicken and cheese added to the broth after cooking down the vegies......stir continuously until the cheese has fully melted....reduce the heat to low and let simmer.....


Cheesy, jalapeno chicken goodness....... I put it in the frige overnight to allow all the flavors to meld together......

looks great!!! My wife made a similar soup earlier this week but used broccoli instead of jalapeno (but I added chopped jalapenos to my bowl).

...and its super easy to make....half an hour or so on hard boil and an hour or so on simmer....

I made some. It is incredible. Very highly recommend for those cold winter days.

Did you use white or dark meat. Breasts can be a little dry...I like thighs better anyway...

If dark meat is better than white, that stuff is gonna be dangerous.

For my next batch I've been thinking about adding a table spoons or two of bacon grease to the broth and a 1/4 cup or so of chopped up bacon bits (real bacon) to the chicken when pre-cooking it. Then just prior to serving adding some chopped up chives to give it a little crunch and color.....

Do it! Those adds will never hurt it!

I'd skip the bacon grease and just add the bacon. Other than that sounds great.

Wish I would have seen this before. Picked up stuff to make chicken tortilla soup yesterday, pretty much the same idea as this too bad don't have a block of velveta to throw in.
