basic ... salt, black pepper, garlic & onion powder ... a little cayenne for a bit more heat. a few others you can play with the flavor profile are chili powder, smoked paprika, white pepper, ground mustard.

I like basic salt and pepper. Add very few spices after that. I like the quality of meat I have, the wood I use and the basic salt & pepper to give me the desired results. Onion and garlic powder with some paprika for color is about all I'd add to poultry.
