Anyone make good tamales willing to share their recipe? Looking to make some this year and experiment with different meats - will use wild hog first then maybe try some duck or venison. Any help is greatly appreciated! PS - We like it HOT!

Wife made me some two weeks ago using some leftover smoked deer meat, it was way good up

Do not have the recipe but next time I told her to add diced onions.

I tried to make them once....ONCE!

It didn't end well.....I buy them from a local Mexican gal that does it right! I love tamales!

I leave that to the pro's. My co-workers mom (84 years old) made the best tamales I've ever eaten. Big, wide tamales wrapped in banana leaves. The ones made with the Mexican white cheese were to die for, no meat, just cheese.
$20/dozen, but well worth it.

I get some recipe ideas off YouTube, but making them is alot of work.

Butt load of work, had friends wife make them and he said she was always up during the night to check the water that steams them. She used pork and brisket and I could hurt myself on them. food

I use this kit from Bolner's Fiesta Seasonings. It makes great tasting tamales. Tamale kit

Extremely labor intensive. My wife can make the most authentic mexican food around but she draws the line at tamales. We just buy them. Love the red chile and pork and the green chile and cheese are good. They make a sweet variety that I'm not a fan of.

Years ago we would get together with another couple to make pork tamales and spend hrs. and hrs.. doing it. Very labor intensive. We would make many dozens to be frozen at a time. The masa is one of the things that give them their great taste, and getting it right makes all the difference. We made them using both Tamalina or Masa Harina, both of which are available still today. After boiling the meat, we would use the juices left over to mix the corn meal to give it a better taste.
If you are going to attempt tamales, you better get with someone experienced with it and take notes.....it's a complicated and time consuming endeavor.

yep, guy that used to work for me had his wife make dozens every week as a fund raiser for their son's HS band travel expense. She was making so many, they bought a tamale making machine to up her production ... take orders and a day or two later he would bring in a 60 quart ice chest full 1-2 times a week, got to bringing in several ice chest full each time ... her spicy pork were great but the bean, cheese and jalapeno I could hurt myself on. she raised enough money for her son to go to Europe with his HS Band in a matter of months ... I miss her tamales!

Sweet little Mexican ladies are my recipe to the best tamales. When in a pinch Pedros from the store.
